New ownership at the Bel Lago Ristorante in the Waterton township has entirely redecorated the Waterton Avenue restaurant and brought a new offering to its menu. This year, several new businesses have opened, or been renovated, throughout the town. The staff at Bel Lago are confident that the ristorante’s new look will offer Waterton visitors a new experience.
According to Part-Owner and Proprietor Kris Spencer, the building where the Bel Lago Ristorante now sits is the oldest free standing restaurant in the park. Spencer intends to carry its tradition of excellence forward for the next generation of Waterton visitors, but also intends to add a few new flavours of his own. The renovations were done with the intention of creating a relaxing, quaint and personal atmosphere; the eatery was repainted in earth tones and imported Italian tiles were installed to furnish the look.
Spencer indicated that he wanted to create an atmosphere that resembled “somewhere you want to sit and relax and drink a good bottle of wine.”
But the most interesting new piece at the ristorante is its unique blend of traditional Italian cuisine with a southern Alberta taste. Spencer’s staff make their own pasta from scratch every single day. They offer a linguini, a fetucini and a spaghetti in black, green and white, in addition to lasagnas and canneloni. The talented kitchen staff however, use ingredients either grown in or sourced from Alberta. The blend provides a unique twist on the Italian flavours offered in the restaurant.
The ingredients are “as clean as clean can be” boasts Spencer. Among other uniquely Albertan blends, the kitchen uses organic free range chicken and all natural beef from the province.
“Our dedicated culinary team works to bring the freshest local ingredients possible to our menu,” he says.
The dining experience is rounded out with a bottle of wine. Spencer has searched for wines produced in smaller batches, and matched his wine offering with items on his menu. Each meal suggests its own wine taste, and the obscure wines on offer further charaterise the restaurant’s new and bold bouquet.
